Gujarat is the only vegetarian state in India .  Majority of Gujaratis of are staunch vegetarians due to Jainism, which requires abstain from non-vegetarian food. The strict vegetarianism of Jains has contributed to Gujarat ’s distinctive cuisine. Geographically Gujarat can be divided into four regions north Gujarat , Kathiawad, Kutch , and South Gujarat . Slight variations in eating habits and modes of preparation, because of the climactic and cultural differences can be observed in Gujarat . Certain ingredients like yoghurt, buttermilk, coconut, groundnut, sesame seeds, limejuice, sugar etc. are very common in Gujarati food.

Gujarati cuisine is unlike any other Indian cuisine.  It is traditionally served on silver platters to the accompaniment of rice and a variety of wheat breads. Throughout the state one can find the Gujarati version of the thali-where all items are vegetarian. But some of the items can be too sweet for those who like spicy foods. The famous Gujarati thali served at weddings consists of Farshans, sweetmeats and a variety of sweet and sour chutneys and pickles.

Gujaratis are very fond of snacks known as Farshan. Popular dishes include Kadhi, Undhyoo, Surat ’s Paunk, and Keema Dhokla etc. Srikhand, a yoghurt dessert, Gharis sweets made from milk, dry fruits and butter. Aam Ras is popular mango drink of the state. The Gujaratatis make superb ice cream under the brand name Vadilal which come in about 20 flavors and are available in the western India.

Places to eat

Many places offer "all-you-can eat" thalis which make a cheap and very satisfying meal. One can also taste Muslim non-vegetarian food and snacks for a small price at stalls across the city and near Teen Darwaza in particular. Travelers can find traditional Gujarati restaurants across the city.

Some of well known eating out places in the city is:-

Cosa restaurant - cheap vegetarian food can be available here. It is opposite the Advantage cinema and serves good food.

Gopi Dining hall - near VS hospital, just off the west end of the Ellis Bridge is this restaurant which one of the most popular thali places in Ahmedabad.

The Food Inn - in the hotel good night has Chinese and Indian cuisine for about Rs 20 to Rs 50 including choice ‘choicely chicken’ and ‘eatable mutton’

Sankalp restaurant - .it is famous for one of the longest Dosas in India -4ft long! It is in the embassy market area near Dinesh hall. It is air-conditioned and serves good south Indian food for a change.

Mirch Masala- ( CCG Rd )- evokes a Gujarati village with colorful murals. Veg/nonveg dishes start at Rs 75/90.

If you want to go for splurge, you can always go to one of the restaurants of some of the top hotels like waterfall restaurant of hotel Holiday Inn, Aabodaana restaurant of Cama hotel.

But if you want to relish some of the most delicious non vegetarian food do not hesitate to check out the following places:-

Shangri-La- It is known for its kebabs.

La Bella - This is a small, dingy one-room eatery tucked away into the forgotten by-lanes of Khanpur in Ahmedabad. It is run by a Goan lady and her companion. The standard fare here is beef, chicken, fish and pork. You won't find many choices and that's why this is good. Rice, Chicken Curry, Pork Chilly Fry or Fish Fry are some of the favorites here. Even a hearty meal would not cost you more Rs 60 at most of the time. But you have to reach the place by noon or 7:30 pm , as the food prepared here is limited. On Mondays these eateries are closed.

Khamasa

There are four main 'laaris' that cater to your tastes -- one specialising in egg, one in beef and two in chicken. The normal route through such an evening would be to try Hanifbhai's specialties. Jinga, chaap, kaleja, bheja, gurda, etc referring to the various parts of the animal are served.

Bhatiar Gulley

Another not to miss place is Bhatiar Gulley, located just off the historical landmark Teen Darwaja. The essential mix is still the same -- variations on the chaap, gurda, bheja and kaleja theme. The highlight of Bhatiar Gulley is Seekh Kebabs. Other dishes such as Mutton Fry and liver are equally good. Bhatiar Gulley has several famed eating-houses. To finish, a hot, special chai (tea) from the shop on the other side of the street is considered ideal among the regular visitors here.
